Our Premium Dutched Cocoa Powder has a high fat content of 22-24% which give a rich intense chocolaty flavour.

Ordinary Cocoa is acidic whereas Dutched Cocoa is neutral. The process used to neutralise the cocoa mellows the flavour, adds a smoothness and darkens the colour.

Note that Dutched Cocoa and Cocoa are not necessarily interchangeable. The leavening agent used in recipes is usually dependant on the pH. Dutched Cocoa requires baking powder whereas bicarbonate of soda can be used with cocoa.

The colour intensity and deep, rich flavour make Dutched Cocoa a favourite with chefs. Try using Dutched Cocoa in cakes, biscuits, ice cream, brownies or hot chocolate.
