Dried ground pepper has been used since antiquity for both its flavour and as a medicine. Black Pepper is the world's most traded spice. It is one of the most common spices added to European cuisines. The spiciness of black pepper is due to the chemical piperine. It is ubiquitous in the modern world as a seasoning and is often paired with salt.

In French cuisine White Pepper is used in light coloured dishes for aesthetic reasons. White pepper is commonly used in Asian and Swedish recipes.

Uses:
Pepper is best when freshly ground and is added towards the end of cooking to retrain the full flavour. Pepper is commonly used as a condiment and in many dishes. It can be added to salads, dressings, meat rubs, stocks, sauces and pickles.
