Millers Organic White Plain Flour is milled from a carefully selected blend of West Australian Hard and Premium White Organic wheats with an average protein content between 9% and 12.5%. During the milling process 1% of the protein content of the wheat is removed with the outer bran layer, Subsequently the minimum protein content of the flour will be 8% and the typical range of protein will be 8% – 11.5 %.
