Couscous is a tasty quick and easy side dish traditionally served with a meat or vegetable stew. It is a staple food throughout North Africa. Couscous is made with semolina flour from durum wheat.
Couscous is a good source of fibre and is fat free. It provides some protein and minerals.
Cooking: Add 1 cup of couscous to 1 cup of boiling stock or water. Remove from the heat immediately. Place the lid on the pot and leave for approximately 10 minutes until the couscous has absorbed the fluid. Fluff with a fork. Serve as is or add herbs or spices.
Uses:
Couscous is wonderful in salads. Place meat, chicken, stew, casserole or roast vegetables on top of a bed of fluffy couscous. For extra flavour, toast the couscous in olive oil prior to cooking. Try adding dried fruit, nuts and fresh herbs to make a yummy couscous dish.

Storage:
Store in an airtight container in a cool, dry place, away from direct sunlight.
Shelf Life:
Up to 12 months when stored as above.
