Szechuan Pepper (or Sichuan Pepper) has a slight citrus flavour, creates a tingly, numbing sensation in the mouth and has an intense aroma. Unlike pepper it is not hot or pungent. Szechuan Pepper is not closely related to black pepper or chillies.

Szechuan Pepper is a key ingredient in the cuisine of Szechuan, China and other Asian cuisines.

Uses:
Szechuan Pepper is used in Szechuan dishes such as mapo doufu and Chongqing hot pot. Add Szechuan Pepper to roast meat, stews, marinades and cured meats. Szechuan Pepper can be lightly toasted and crushed or ground, then added to the dish. Szechuan Pepper is used to flavour oil.
